A Vegan Photoshop.
Sometimes combination businesses don't work. The disco laundrymat. The ice cream record store. But occasionally, somebody comes up with a genius idea that makes sense on every level: the photo shop cafe.
It's been a photoshop for years. The Photo Plus shop, near the corner of Chapel and Temple across from the green has been a successful business for years. On Monday, June 26th, the photo shop added an additional vegan cafe, so that people can wait while their pictures are beiong developed and enjoy a variety of sandwich wraps, juices, and ice cream.

I spoke to Nirav and Nikil Shah, two kids from Amity High School whose father has owned and operated the photo shop for years. It was actually their idea. "Because we're vegan but there's nothing really in New Haven that's strictly vegan." The two brothers have always loved cooking and plan to add coffee and breakfast, as well as a selection of vegan cookies.
At this time, the cafe is only about 70% complete. The addition of a refrigerated section of perpared food has yet to be unveiled. One consistent factor of the items available at the cafe photoshop: everything is entirely vegan, and nothing contains any animal products or byproducts.
Environmentally Conscious
Even the cups are made from corn. The husks are melted for their starch which is then used to build a polymer, the building blocks of plastic.

The Shahs expect for business will improve as the summer continues, and when school returns. Their hope wasn't just to provide refreshments for people waiting for their photographs to be developed. It seems that their motivation is to provide food for the community of vegans in New Haven. I had the berry fizz smoothie soda thing. It was really tasty.

Raw Foodists
Also to vegan food is the inclusion of a type of food categorized as "raw." Raw food is essentially any type of food that is not heated above 116 degrees. The reason why it's emphasized as "uncooked" is because of a theory that cooking food creates free radicals, which unlike anarchist guerillas, actually cause cancer. It's been documented by scientists and dieticians that raw food has the ability to prevent disease, and can sometimes reverse the effects of advancing diseases.
